Whipping up a Thanksgiving or Christmas feast can be challenging if you have family members or friends on the guest list that are following a specific diet. Turn to a healthy holiday recipe that works for vegans, people avoiding carbs, and everyone else alike by trying this simple mashed cauliflower next to your traditional mashed potatoes.
1 fresh head of cauliflower
1 tablespoon of minced garlic
1 leek, trimmed to use the white section and cut into 1/2 slices
1 tablespoon of butter or margarine
Salt and pepper, to taste
Set up a steamer rack over a pot of boiling water or fill a microwave safe bowl with half a cup of water. Steam the cauliflower, leek slices, and minced garlic until it is tender. This should take about 30 minutes on the stove top, or ten minutes in the microwave with an occasional stir. Use a food processor or immersion blender to break up all three components into a smooth pureed blend. Leave some chunks of cauliflower for a more rustic style. Add your butter or margarine and season to taste.
